We are a family run farm located in Columbia, Connecticut. Our farm is the 7th generation of Wilkinson farmers. Today three of those generations work together to maintain equipment, process the honey, maple syrup and take care of the animals. ​All to bring you the highest quality products.
Here at the farm our sap is collected from the trees using tubing and a vacuum system to make sure it is fresh and clean. The sap is then boiled on a 2×6 wood fired evaporator where we monitor the temperature and density to ensure we create the highest quality syrup. Once the syrup is ready to draw off the evaporator it is collected and then bottled at the end of the day. We are currently running a little over 700 taps and are excited to be expanding. Sap is boiled daily to give you nothing but the best maple syrup.
From mid-February to mid-March you will find us in our beautiful traditional New England sugar house. Trees were cut and milled on our property to make a traditional timer frame. The joinery was cut by hand and assembled by 3 generations. In this picture you can see the 3 men responsible for the majority of work that went into building this structure.
At the farm we keep a variety of northern raised queens to make sure our bees are strong and ready to make honey when the flow is on. We have a combination of Carniolan, Russian and Northern bred Italians to keep a diverse population. We concentrate on using locally raised queens to increase our over winter survival. Our farm does not use synthetic chemicals to treat our hives. Our honey is pure local honey made from a mix of local wildflowers.
