Hens on the Hill Farm

Hens on the Hill Farm is a first generation small family farm located in South Windham, CT, where Joshua and Carra Unick have over 300 maple trees to tap for 100% pure Connecticut maple syrup. Hens on the Hill Farm is named after their flock of chickens and ducks that they care for as pets.
Through the year, Joshua and Carra monitor and maintain the health of the woodlands also known as the sugarbush. Then, at the end of winter, they tap the maple trees on the farm to collect sap and boil it down to produce pure maple syrup which is then bottled and sold at local farmers markets.

Joshua added that, “As an avid outdoorsman, being able to manage the sugarbush and ensure the health of the forest is a passion that we have. At our farm we manage for the best health of the whole forest to ensure the wildlife can thrive around our farm.
Joshua, US NAVY Veteran, enlisted in 2008 for the “Silent Service” as a submariner. He served for 8 years stationed in Groton, CT. When asked what it means to be a CT Farmer Veteran, he replied, “Serving the country was part of life that has transitioned into serving the community with what is produced on our land.” He credits his time in the NAVY for teaching him “unique skills like discipline, resilience, and resourcefulness” that carry over into farm life.
Hens on the Hill Farm produces pure maple syrup, maple candies, maple sugar/crumbles and has plans to expand maple syrup products into cotton candy and maple cream.
What to know about maple syrup? The season runs early February until late March, but it all depends on cold nights and warm days that make the sap run. Each year can vary greatly!
